Soup is so comforting. Add this easy soup to your winter soup repertoire!

1 Tbsp olive oil
½ c chopped onion
½ c chopped green pepper
1 c chopped ham steak
3 c finely diced sweet potatoes
32 oz chicken or vegetable broth
4 Tbsp tomato paste
2 tsp cumin
1 tsp oregano
Salt and pepper, to taste
Fresh cilantro, chopped
1. Add 1 Tbsp olive oil to a large nonstick saucepan. Add the onions, peppers, and sweet potatoes and sauté 3 minutes or until peppers are crisp and tender (sweet potatoes will not be finished cooking).
2. Add chopped ham and broth to the onion mixture. Stir in the tomato paste, cumin, and oregano; bring soup to boil, then reduce heat, cover and simmer 10-15 minutes or until sweet potatoes are tender. Remove lid; let simmer for an additional 5 minutes to allow soup to thicken. Season with salt and pepper, to taste.
3. Ladle soup into bowls and top with cilantro.
