Super Bowl Salad

This one's straight from a family cookbook, and don't let the name fool you: This salad is good all year round! Over the years, we've copied the recipe from our mom's cookbook onto postcards or into the Notes app on our phones. Some of my siblings tell me they love to use strawberries instead of craisins in the summer months. I've added chicken instead of bacon to make it more hearty for a meal. This is a favorite of mine for hosting, and my friends who've had it at dinner parties refer to it as my "infamous" salad. 



  • 1/2 c olive oil

  • 3-4 Tbsp granulated sugar

  • 1/4 c red wine vinegar

  • 1 garlic clove, crushed or minced

  • 1/4 tsp salt

  • 1/4 tsp freshly ground pepper

  • 1/4 tsp paprika

  • 1/8 tsp cayenne pepper


  • 1 head romaine lettuce

  • 1/4-1/2 c craisins

  • Feta cheese, crumbled

  • Slivered almonds

  • 1/2 red onion, sliced

  • 2-3 strips of bacon, cooked


1. Combine all dressing ingredients into salad dressing shaker. Shake vigorously until all ingredients are combined. 

2. Combine salad ingredients in bowl, adding as much craisins, feta, and almonds as you desire. 

3. Dress the salad right before serving. Use tongs to lightly toss so that ingredients are coated with dressing.
