So, so simple and tasty! I love just about anything wrapped in a tortilla and I find my kids are the same way. I can sneak so many things by them when I put it in a tortilla.

Paleo: Use Salsa’d chicken instead of dried lentils. Omit cheese and sour cream. Use lettuce wraps or serve over cauliflower rice or lettuce.

Taco Filling:

  • 1 red bell pepper, small diced

  • 1 medium onion, small diced

  • 3 garlic cloves, minced

  • 2 cups dried lentils

  • 2 Tbsp chili powder

  • 1 Tbsp cumin

  • 2 tsp dried oregano

  • 1 tsp salt

  • 32 oz vegetable broth

  • 16 oz jar salsa


  • 10-12 flour or corn tortillas

  • 1 bag shredded lettuce

  • 2 tomatoes, diced

  • 1 avocado, diced

  • 8 oz bag shredded cheddar cheese

  • 8 oz sour cream


  1. Add all ingredients for the taco filling to the slow cooker. 
  2.  Cook on high for 4 hours or low for 7 hours, stirring once halfway through if possible.
  3. Serve in tortillas with desired toppings.
