Mexican Rice Bowls

Ingredients
Cilantro-Lime Rice
1 cup white rice
¼ c cilantro, chopped
1 lime
Salt, to taste
Toppings
2 cans black beans, drained and rinsed
Shredded cheddar cheese
Lettuce, shredded
2 tomatoes, diced
1 avocado, diced
Sour cream
Salsa
Preparation
- Make the cilantro lime rice: Bring 2 cups of water to boil, add white rice and a sprinkle of salt. Reduce heat to low and cook until rice is tender, about 15 minutes or according to package instructions. Add chopped cilantro, juice of lime, and salt to cooked rice.
- Assemble rice bowls. In each bowl, spoon in some cilantro-lime rice and top with black beans and other toppings.
