Mexican Rice Bowls

Quick and fun, this recipe is perfect for a weeknight dinner.

Cilantro-Lime Rice

  • 1 cup white rice

  • ¼ c cilantro, chopped

  • 1 lime

  • Salt, to taste


  • 2 cans black beans, drained and rinsed

  • Shredded cheddar cheese

  • Lettuce, shredded

  • 2 tomatoes, diced

  • 1 avocado, diced

  • Sour cream

  • Salsa


  1. Make the cilantro lime rice: Bring 2 cups of water to boil, add white rice and a sprinkle of salt. Reduce heat to low and cook until rice is tender, about 15 minutes or according to package instructions. Add chopped cilantro, juice of lime, and salt to cooked rice.
  2. Assemble rice bowls. In each bowl, spoon in some cilantro-lime rice and top with black beans and other toppings.
