1 lb ham steak, diced
1 c frozen peas
½ yellow onion, diced
2 cloves garlic, minced
3 c riced cauliflower
Salt and pepper, to taste
1. In a large skillet, heat 1 Tbsp olive oil over medium heat.
2. Add diced onion, garlic, peas, and ham. Saute until onion is translucent, peas are no longer frozen, and ham begins to brown on the sides.
3. Add cauliflower rice (and if necessary, 1 Tbsp more olive oil). Saute 5-7 minutes, stirring occasionally, until cooked to desired doneness.
4. Season to taste. Serve in bowls.
