This sandwich is a cross between a chicken salad sandwich and a tuna melt (two of my favorites!), and I whipped it up with just a few ingredients I had on hand. Nothing fussy—just simple and delicious. –Kellie Moore, Verily Yours editor

- 1 can (12.5 oz) chicken
- 3 Tbsp Ranch dressing
- Salt and pepper to taste
- 2 slices cheddar cheese
- Butter or margarine
- 4 slices of bread
- Drain chicken. In a small bowl, combine chicken, Ranch dressing , salt, and pepper.
- Butter one side of two slices of bread. Place butter-side down on a griddle or in a skillet. Top with chicken mixture (divided evenly between the two sandwiches) and cheddar cheese. Butter remaining slices of bread and place on top, butter side up.
- When bottom slices of bread turn golden brown, flip sandwiches, then cook the other side until golden brown.
