Cheddar Ranch Chicken Melts

This sandwich is a cross between a chicken salad sandwich and a tuna melt (two of my favorites!), and I whipped it up with just a few ingredients I had on hand. Nothing fussy—just simple and delicious. –Kellie Moore, Verily Yours editor

  • 1 can (12.5 oz) chicken
  • 3 Tbsp Ranch dressing
  • Salt and pepper to taste
  • 2 slices cheddar cheese
  • Butter or margarine
  • 4 slices of bread


  1. Drain chicken. In a small bowl, combine chicken, Ranch dressing , salt, and pepper.
  2. Butter one side of two slices of bread. Place butter-side down on a griddle or in a skillet. Top with chicken mixture (divided evenly between the two sandwiches) and cheddar cheese. Butter remaining slices of bread and place on top, butter side up.
  3. When bottom slices of bread turn golden brown, flip sandwiches, then cook the other side until golden brown.
