Soup is so comforting. Add this easy soup to your winter soup repertoire!
Vegetarian: Omit ham steak.
- Prep Time
1 Tbsp olive oil
½ c chopped onion
½ c chopped green pepper
1 c chopped ham steak
2 (15 oz) cans black beans, drained and rinsed
32 oz container vegetable broth
4 Tbsp tomato paste
2 tsp cumin
1 tsp oregano
Salt and pepper, to taste
Fresh cilantro, chopped
1. Add 1 Tbsp olive oil to a large nonstick saucepan. Add the onions and peppers and sauté 3 minutes or until crisp and tender.
2. Add chopped ham, beans, and broth to the onion mixture. Stir in the tomato paste, cumin, and oregano; bring soup to boil, then reduce heat and simmer 5-6 minutes or until soup is slightly thickened. Season with salt and pepper, to taste.
3. Ladle soup into bowls and top with sour cream and cilantro.
