Berbere-Spiced Lentils with Dates

Berbere is a rich Ethiopian spice blend composed of paprika, fenugreek, coriander, cumin, cardamom, cinnamon, and more. (If you don't see it in your local grocery store, try blending the ingredients yourself—or tack it onto your next Amazon order.)

  • 1 c brown lentils, rinsed

  • 2 large carrots, diced

  • 2 c water

  • 2 tsp berbere

  • ½ tsp garlic powder

  • Salt, to taste

  • 2 c fresh spinach, roughly chopped

  • ¾ cup dates, thinly sliced

  • Cooked rice, for serving


1. Add lentils, carrots, water, and spices to a saucepan; bring to a boil.

2. Once boiling, reduce to a simmer. Leave uncovered until lentils are cooked (about 30 minutes). Lentils and carrots should be tender.

3. Stir in spinach and dates. Salt and pepper to taste. 

4. Serve with rice.
