Berbere-Spiced Lentils with Dates

Ingredients
1 c brown lentils, rinsed
2 large carrots, diced
2 c water
2 tsp berbere
½ tsp garlic powder
Salt, to taste
2 c fresh spinach, roughly chopped
¾ cup dates, thinly sliced
Cooked rice, for serving
Preparation
1. Add lentils, carrots, water, and spices to a saucepan; bring to a boil.
2. Once boiling, reduce to a simmer. Leave uncovered until lentils are cooked (about 30 minutes). Lentils and carrots should be tender.
3. Stir in spinach and dates. Salt and pepper to taste.
4. Serve with rice.
