BBQ chicken is such a classic—and even more delicious on cauliflower crusts.

4 mini cauliflower crusts
½ c Paleo-friendly barbecue sauce
1 c cooked chicken breast (rotisserie chicken works well, or about ½ pound chicken breast)
½ cup shredded carrots (about 1 carrot)
2-3 green onions, chopped
Fresh cilantro, to garnish
1. Preheat oven to 425°.
2. Spread barbecue sauce on each cauliflower crust. Top each tortilla with chicken, shredded carrots, and green onions.
3. Place pizzas on cookie sheets.
4. Bake for approximately 6-8 minutes.
5. Top each pizza with cilantro. Slice and enjoy!
